Recipe:Egg Salad Sandwich

Egg Salad Sandwich
 
 
 

Ingredients

6HARD-BOILED EGGS            
1/4cup mayonnaise
1Tbsp. fresh lemon juice
1Tbsp. yellow mustard
1/4tsp. salt
1/4tsp. pepper
1/2cup finely chopped celery
1/4cup thinly sliced green onion
8slices rustic wheat bread
4lettuce leaves

Directions

Step 1CHOP eggs. MIX mayonnaise, lemon juice, mustard, salt and pepper in medium bowl. ADD chopped eggs, celery and green onions; mix well. REFRIGERATE, covered, to blend flavors.(Makes about 2 cups egg salad.)
Step 2SERVE on wheat bread with lettuce leaves.
